In 2014, Assistant General Manager Nick Harris embarked on the idea of barrel aging coffee beans in used wine, beer, and spirit barrels. Familiar with the concept that a few others have tried, he decided to collaborate with other local proprietors around the Sonoma County area in sourcing barrels.
Each barrel is carefully considered for its flavor and composition. The flavor profile of each barrel is paired with our extensive selection of beans to create the right balance between barrel and coffee. After adding the green beans into the barrel for a determined amount of time, the beans are extracted from the barrel and given to the roast master for roasting. The finished product is an aromatic and flavorful cup of coffee with great body and mouth feel unique to each individual barrel.
